It was an extremely grueling day at work after being off for 10 days. On top of that I forgot to pick up bean sprouts at the store yesterday and had to feed my boyfriends cats before even coming home. So I definitely needed something fast. Hummus is deceptively easy to make. Everyone always is astonished when I tell them how easy it can be. Now, granted to make a superb hummus you can buy dry garbanzo beans and soak them over night, but for speeds sake a can of beans will work just fine. I was also totally geeked when my sprouts, head of lettuce, broccoli and chocolate long john (shhh it was a long day, I deserved it) rang out to only $2.51!!
On a recent (as in less than a week ago) trip to Asheville, NC over winter break, I had a delicious hummus club sandwich. (I seriously can not spell that word to save my life.) On our way out of town I had the world's best chocolate croissant, it was like pure heaven in puff pastry form. I convinced my carnivorous brother to try the hummus club sandwich. Well, one bite ended up in me stealing half of his sandwich. I was on a quest to reproduce said bread concoction:
Hummus-Tweaked but used the base recipe from Cooking Light
-In a blender or food processor dump the following:
1 15 oz can of garbanzo beans
2 TBS of waters
1 small lemon juiced
2 heaping TBS of tahini
1/2 tsp of cumin
1/4 tsp of sea salt
2 cloves of garlic (I like, no love garlic so I doubled this, roasting it would also be fabulous)
Dash of pepper
Dash of red pepper
(You can play with so many different flavors, like roasted red peppers, parsley, chives-experiment, I'm just too tired)
-Blend or puree until completely smooth. I kid you not it's that easy!
To make the sandwich: toast two pieces of whole wheat bread, spread with hummus, top with tomato slices, lettuce, red onion and bean sprouts (for a good wholesome crunch.)
Easy, fast , super healthy, chock full of protein and of course delicious!
